Paratha / Buss Up Shut Recipe
Serves 8
Buss up Shut is a type of Roti in Trinidad and Tobago used for Parties and Weddings. It has lots of layers and is broken up at the end of cooking. It tastes great with some nice Chicken Curry and Pumpkin.

Ingredients
4 Cups / 1lb. Flour
4 tsp Baking Powder
1tsp. Salt
1 ½ oz. or 3 tbsp. Softened Margarine or Ghee
¼ cup or 2 oz. oil for cooking
Preperation
1. Stir Flour, add baking powder and salt.
2. Add enough water to form a smooth soft dough
3. Knead well and leave to relax for ½ hour covered with a damp cloth.
4. After the dough has relaxed, re-knead and divide into four balls.
5. Flour surface and roll out dough to 8” or 9” circle as desired: spread with some margarine and sprinkle with flour.
6. Cut rolled dough from centre to edge, roll tightly into a cone, press peak of cone into the centre and flatten; leave to rest for 30 minutes.
7. Sprinkle flour on surface and roll out dough very thin with a rolling pin.
8. Cook on a moderately hot, greased baking stone (tawah) for a minute.
9. Turn over and grease with oil and cook for 1 minute.
10. Turn over to the other side and brush with oil and cook for 1 minute.
11. Remove from heat and crush with a wooden palette or wrap in a clean towel and crush.
